Down with conjunctivitis, I’m finding a hard time cooking and doing the daily chores. Thankfully, I could find some Paneer on my pantry. I wanted a quick and easy recipe for dinner, no grinding…nothing! The dish has turned out to be yummy enough that I just needed to prepare only a Kadhi to go with it for rice.

Red Chilli powder-1 1/2tsp, Coriander powder-1tsp, Garam masala-3/4tsp, Turmeric powder- a pinch
Kasthoori methi-to sprinkle
Heat oil in pan and splutter coriander seeds. Add ginger-garlic paste and green chilies. Add onion and saute till translucent.
Add salt and spices. Add the tomatoes and cook till oil starts to come from the sides. Add Paneer cubes and kasthoori methi. Add capsicum and do not over-cook. Let the capsicum retain its crunchiness. Garnish with chopped coriander leaves. To make gravy, add a cup of water and cook for a couple of minutes. I preferred the dry version, and hence didn’t add water.
