Baby potatoes: 100gms (cut into half and parboiled in salt)
Cashew nuts- a handful roughly chopped
Ginger and garlic- a tablespoon each, finely chopped
Capsicum- 1 cubed (of any color)
Schezwan sauce- 2tbsp
Water- ⅛ cup
Soy sauce- 1tbsp
Sugar- 1 tbsp
Salt- to taste
Oil- for deep frying + 2tbsp
Scallions- chopped, to garnish
Instructions:
Deep fry the parboiled baby potatoes. Remove and keep them aside.
In a pan, heat two tablespoon of oil and add chopped cashews. Saute.
When lightly browned, add chopped ginger and garlic. Mix well.
Add capsicum, schezwan sauce, sugar and a dash of water. Stir it in.
Add soy sauce and baby potatoes. Mix and sauté again.
Garnish with chopped scallions- green and white.
Serve hot with steamed rice.
