Loved the new look of this space? Hard work, I tell you! I pestered few dear friends of mine, day and night, since the last two days and yes, here I am, pretty content with the end result. Thanks, Jaibala, Sid and Vinay- this wouldn't have been possible without you guys!
Today is my birthday. Well, sort of! Its not the actual date of birth, but we Malayalees tend to celebrate the star on which we were born. And yeah, much to my surprise, no one has remembered or wished me till now. It's sad you know, because last year same time, I was with him all set to visit the temple, clad in a lovely Kerala saree, adorned with Jasmine flowers on my hair. Hmmph! This post would remind my husband and my family to at least give me a call today. Am I grumpy? Well, kinda!
So, the birthday is celebrated by preparing a Sadya or a vegetarian lunch followed by having payasam or pudding. Since I was pretty upset and felt rebellious I went about with preparing a non-vegetarian but easy peasy dish.
Thirty minutes was all that it took.
- 4 chicken drumsticks
- ½ tablespoon oil
- 2 tablespoon honey
- 2 tablespoon water
- 2 teaspoon ginger freshly chopped/grated
- ½ teaspoon cumin ground
- ½ teaspoon chili flakes
- ¼ cup cilantro leaves
- Salt
- Pepper
- Heat oil in a non-stick skillet and add chicken . Cook on high flame for about a minute on each side, season with salt and cracked pepper, reduce to medium-low heat, cover with a lid and cook for 20 to 25 minutes.
- In a bowl, mix honey, water, cumin powder, chili flakes and ginger.
- Pour over the drumsticks and mix well. Let it cook for a couple of minutes. Stir continuously until they are coated well with the mixture. Serve with rice or as an appetizer.
