Happy B'day, Tomato baby!! Yeah, my Tomato blog turns one today! It's a big celebration. I've baked my first cake and that too in a pressure cooker. Super-excited. Join the fun @Tomatoes as I take you through my journey.
Coming to the recipe. It has come out so light, soft and spongy. The cake is also Egg-less. Stop ranting about not having an oven. Bake this and see the shocked expression on your hubby's face when you present this to him. Oh yeah, P definitely was in utter dismay.

Ingredients:
¼ cup powdered sugar
¼ cup butter
½ cup condensed milk
1 cup All purpose flour
3 to 4 drops of chocolate essence
2 teaspoon of cocoa powder
2 teaspoon drinking chocolate power
½ teaspoon each of baking soda and baking powder
½ cup milk
Handful of chopped raisins and cashews
Method:
Before anything, add a cup of salt in the pressure cooker and heat closed. Make sure you DO NOT put the whistle. Yeah,simply heat in low flame. Then go for the batter preparation.
In a bowl, add powdered sugar, butter and condensed milk. Beat well.
Add flour,chocolate essence, cocoa powder and chocolate powder and beat the batter by folding in.
Add baking soda, baking powder and ¼ cup of milk. Beat again.
The batter shouldn't be too loose or thick. You can add the remaining ¼ cup of milk and beat well.
Now generously grease a cake tin with butter. Pour the batter and gently give a tap so that the batter settles evenly.
Add chopped cashews and raisins on top of the batter.
Slowly place the cake-tin inside the pressure cooker and cooked closed in medium heat for 25 mins.
DO NOT put on the whistle or add water.
Slowly open the lid after 25 mins and insert a knife or fork at the center of the cake. It would be all fluffy now. If the knife comes out smooth without any batter remaining, then you are good to go.
Slowly take out from the cooker and let it cool for five minutes.
Remove from the cake-tin. Serve hot/cold. 🙂

The original recipe does not call for chocolate powder or cocoa powder or chocolate essence. Do not run to the near-by store to grab them, Even if you do not add, you'll get a nice spongy cake. I love chocolate flavor and couldn't help myself from making it chocolaty. 🙂

Very yummy cake and that to baked in a pressure cooker ! Amazing. I als love chocolate cake very much. BTW, instead of butter, I put cooking oil. It turns out equally soft, but has less calories.

Hey Shalini - this sounds like a good recipe! Are you saying the cake can cook in a "dry" pressure cooker? No water?
