The love of my life once told me that I’m like his Mom- as in, I could prepare a full-fledged lunch in say, 30 minutes? What more do you want- a man accepting his love like his Mom!! 😛
Being a part of the “Olive Green” family, you can expect guests at any time of the day. And I’ve learnt that instead of making separate veg and non-veg curries, rotis and rice- a biriyani or pilaf with accompaniments serve the purpose. Guests are mighty satisfied too. What say?
I thought of making this pulao yesterday for lunch! Well, this is not the traditional layered biriyani which takes so much of hard work and time. This is a simple one, but delicious enough to go “Yummmmmmmmmmm…”!!
Basmati Rice – 2 Cups
Curd- 1/2 cup
Chilli powder- 1/2 to 1 tsp
Ginger-Garlic paste- 1tsp
Salt- to taste
Green chillies chopped- 5
Coriander leaves- 2tbsp
Mint leaves- 2 tbsp
Cinnamon – 3
Or add 1tsp Garam Masala powder
Mix chicken with curd, 1 tsp salt, chilli powder and ginger-garlic paste. Keep aside for an hour.
Heat ghee in a pressure cooker. Fry onion till brown.
Add chicken mixture. Fry till the liquid is absorbed.
Add powdered ingredients, mint and coriander leaves. Mix well.
Add rice and water.
Pressure cook till a whistle is blown. Or you can prepare this in a rice cooker too.
Serve with accompaniments- Raita, Pappad, Pickles, Fried Chicken etc will do.
