Ask me for my favorite cuisine, I will without a blink of an eye say, Chinese! As much as I love to try out new dishes at various Chinese restaurants, I make it a point to cook them at home too. It’s pretty easy to cook a Chinese meal provided you’re prepared well ahead- with the chopping, deep fry and other stuff. My Chinese cooking guru is none other than Nita Mehta! Oh, I have tried her Chinese recipes and believe me it has turned to be at par with the ones we get in those fab Chinese food chains across the country, or may be more.
Here is a simple recipe from her collection of Chinese recipes, with my addition and subtraction!
Cooked rice- 3 cups,
Garlic- finely chopped 2tbsp
Onion- finely chopped- 1
Green chillies- finely chopped- 2
Cabbage- chopped- 1/2 cup
Capsicum- finely chopped- 1
Boneless chicken- 1 cup
Salt, Pepper powder – 1/2tsp, Soya sauce- 1 tsp
Boil 2 cups of water with 1/2tsp salt. Add chicken and cook for five minutes till it turns soft. Remove and shred to thin strips.
Heat oil in a wok. Add garlic and onion. Saute for a few minutes.
Add green chillies, cabbage and capsicum. Stir fry for a couple of minutes.
Add shredded chicken, salt and pepper. Saute well.
Add soya sauce and mix.
Add cooked rice and stir fry for 3-4 minutes.
