I have been trying out different recipes with Okras since a while now. Of course, that is because my husband loves this vegetable. So, a few days ago heΒ asked me to make stuffed okra. And I went about in search of a perfect recipe. The neighbor came to my rescue and this one is her masterpiece.
Stuffed Okra orΒ Bharwan Bhindi is a dry, shallow fried spice-masala filled okras. The okras are slit and the spice masala is filled in. Once the okra cooks with masala, it gives an amazing flavor.Β This version is a no onion-no garlic recipe and can hence be had during your fasting days.
Okras can be prepared in different styles - chopped, fried or combined with other vegetables. Some popular South Indian style okra preparations include Stir Fried Okras and Hyderabadi Bhindi. Stuffing and stir frying the okras is a popular North Indian technique of cooking okras.
Recipe for Stuffed Okra Fry:
This is an easy version of Bharwan Bhindi where the stuffing contains only spice masala. You can also try adding gram flour (besan), grated coconut and ground peanuts.

- Total Time: 25 minutes
Ingredients
- 20-25 fresh okras
- 1tsp coriander powder
- Β½tsp red chili powder
- Β½tsp turmeric powder
- 1tsp fennel seed powder
- 1tsp dry mango powrder
- 3tbsp oil
- Β½tsp cumin seeds
- Salt, to taste
- Coriander leaves, finely chopped, a handful
Instructions
- Wash and pat dry the okras.
- Cut off the head and bottom tip. Make a small slit in the middle careful not to split into half.
- Add all the spice powders and salt in a bowl and mix well.
- Stuff the spice masala in each of the okras.
- In a pan, add oil and crackle cumin seeds.
- Place the okras and cook in low heat for about ten minutes, stirring in between.
- Add coriander leaves and mix well. Serve hot.

Oh this recipe reminded me of my mom as she used to make it in the exactly same way but she also used to add onions to it. I also try it but never comes out as good as hers. BTW, bharwan Bhindi is my favourite π

I normally stuff my bhindis with a stuffing of coconut, tamarind, salt, sugar, chillipowder, all ground coarsely in the mixer. It is delicious too. You should try that out!
