Last day I wrote about the lunches we have at the Offr's Mess. But what is an Officer's Mess?
Officer's Mess stands tall in the traditions of our Armed Forces. It is a wonderful institute that houses all the major historical events of the Regiment. It holds marks of great achievements by showcasing the many silver trophies, mementos and important events. These are the Regimental memorabilia which demands a high degree of respect and deference in its handling and treatment. The Mess also has an enormous library and well-maintained billiards room, the bar, the dining room, the sitting area. It is sheer brilliance. The Mess provides you with the right delicacies, balances out the hardship of daily work and provides a relaxing and friendly atmosphere.
Officer's Mess also houses guest rooms and a great support staff who makes us feel like home with their courteous behaviour. It is also a memorable part of anyone's life as important parties and functions are held here. I remember, the first time I entered the Offr's Mess. I was being carried by my husband as part of their welcome. The newlyweds, newly commissioned officers and other officers and families coming back for tenures are all 'sorted' out here. Mind you, each dining experience is 'unique' and we all have our fair share of action.
An Officer's Mess is home for the bachelors and a get-away for the husbands.
However, the regulations including formal dress code, rules of the Mess and dining etiquette are to be strictly followed. Regular meetings are conducted for its proper functioning. The Officer's Mess is not only a place for the officers to drink or dine. It is where they get to know one another beyond the strict professional interaction of their primary duties. You cannot find anyone with their noisy behaviour, ragging, the clinking of glasses, and other forms of rowdyism in the Mess. You will be under the wrath of Mess Havildar who is a senior NCO who manages and executes the day-to-day activities of the mess.
Oriental Chicken Salad is one of the permanent dishes in a Dining-In/Dining-Out party. It is delicious and pretty easy to make. I have prepared my version of the salad where I haven't fried the chicken chunks but instead cooked them. Prepared with everyday ingredients, I usually have it with my evening cup of coffee as well. Weird combo, I know 😛
Oriental Chicken Salad Recipe:

Description
Oriental Chicken Salad is a flavorful easy and light dinner salad that makes a complete meal. Add some toasted sesame seeds and almonds along with an Oriental Vinaigrette and you are good to go!
Ingredients
- 500 gms boiled chicken
- 1 tbsp soy sauce
- ½ tbsp honey
- ½ tsp ginger, grated
- 2 garlic cloves, grated
- ¼ cup concentrated chicken stock
- ½ red bell pepper, thinly sliced
- ½ green bell pepper, thinly sliced
- ½ carrot, thinly sliced
- 4 spring onion whites and greens, thinly sliced
- Salt, to taste
- Pepper, crushed - to taste
For dressing:
- 1 tbsp vinegar
- 1 tbsp oil
- ½ tbsp soysauce
- ½ tsp ginger, grated
- ¼ cup concentrated chicken stock
- ½ tbsp sesame oil
- ½ tbsp sesame seeds, toasted
- ½ tbsp almond seeds, chopped and toasted
Instructions
- Cook chicken in water adding about ½ teaspoon of salt. Once cooked, cut them into bite sized pieces and place in a bowl.
- Add soy sauce, honey, ginger, garlic and stock to the chicken and steep for couple of hours. Mix in between.
- Mix together all the ingredients for the dressing.
- Drain the chicken chunks to another bowl. Add the vegetables and mix well. Add the dressing and give a toss.
- Check the seasonings and add salt and pepper if required.
- Add toasted sesame seeds, almonds and sesame oil. Toss again and serve.

This looks like a very easy recipe and I love salads. Chicken salads are my favourite but never tried it this way. Good to know about officers mess.
