Who doesn't like a side of yam stir fry with rice and rasam? That's comfort food with all the added nutrients of yam!
There are days when I don't make elaborate lunch with many side-dishes and accompaniments. Sometimes, it is just Rasam, rice and a potato stir fry. That's comfort food for me! I am sure the husband agrees too (he may scramble an egg as well). If you are too worried about having potatoes all the time, try preparing a stir fry with Elephant foot Yam.
There are many health benefits for Yam for it is rich in Omega3 and improves good cholesterol. It also helps in maintaining the estrogen levels in women. Yam is best consumed in summers as it has considered a cooling food.

I didn't know this ugly Elephant Foot that stares at me in the market tastes so good. I thought it was chocabloc with carbs and avoided it like the plague. Perhaps this recipe will make me change my mind. Congratulations on finishing TWO simultaneous AtoZ. You surely are a superblogger!!!!

This one's an easy recipe, Shalini. 🙂
There's another one my SIL prepares, and taught me.
Pressure cook yam that is cut in slices, and then, once cool, add tamarind pasts, turmeric powder, red chilli powder, salt and ginger-garlic paste to the pieces, smear them with rava and shallow fry. Just like fish fry, this recipe is my nephew's fav. Earlier, when he was younger, my SIL would fool him saying she had prepared fish fry and he would eat it happily! 😛
