Indian Rice Pilaf (Pulao)

Description

A quick and easy rice pilaf flavored with aromatic Indian spices and seasonings.


Ingredients

Scale
  • 2 cups Rice
  • 2 tbsp Ghee
  • 1/2 tsp Cumin seeds
  • 1 Bay leaf
  • 1/2 cup Onion thinly sliced
  • 10 Cashews
  • 5-6 Raisins
  • A few Mint leaves
  • Salt to taste
  • 1/2 tsp Turmeric powder
  • 1.5 cups Water

To Grind:

  • 4 cloves of Garlic
  • 1" piece of Ginger
  • 4 Green Cardamoms
  • 1 Black Cardamom
  • 2 Cloves
  • 3 Peppercorns
  • 1" piece of Cinnamon
  • 1/2 tsp Cumin seeds

Instructions

  1. Wash and rinse rice.
  2. Blend together garlic, ginger, green cardamoms, black cardamom, cloves, peppercorns, cinnamon, and cumin seeds.
  3. Heat ghee in a pan and add a bay leaf and cumin seeds.
  4. To this, add sliced onions and saute until slightly browned.
  5. Add cashews and raisins. Mix well.
  6. Add the ground spice paste and saute until the raw smell of spices goes away.
  7. Add a little turmeric powder to it and mix well.
  8. Add the washed rice to this mixture and stir.
  9. Add mint leaves.
  10. Add water and cook covered until the liquid is absorbed and rice is cooked.

Notes

You may also cook the rice in a rice cooker. After adding water, transfer the entire mixture to the rice cooker and switch on the 'cooking' mode.

Unlike the standard 1:1 ratio of cooking rice, I add only 1.5 cups of water for 2 cups of rice. I do not like rice to overcook and stick together.
