Description
A quick and easy rice pilaf flavored with aromatic Indian spices and seasonings.
Ingredients
Scale
- 2 cups Rice
- 2 tbsp Ghee
- 1/2 tsp Cumin seeds
- 1 Bay leaf
- 1/2 cup Onion thinly sliced
- 10 Cashews
- 5-6 Raisins
- A few Mint leaves
- Salt to taste
- 1/2 tsp Turmeric powder
- 1.5 cups Water
To Grind:
- 4 cloves of Garlic
- 1" piece of Ginger
- 4 Green Cardamoms
- 1 Black Cardamom
- 2 Cloves
- 3 Peppercorns
- 1" piece of Cinnamon
- 1/2 tsp Cumin seeds
Instructions
- Wash and rinse rice.
- Blend together garlic, ginger, green cardamoms, black cardamom, cloves, peppercorns, cinnamon, and cumin seeds.
- Heat ghee in a pan and add a bay leaf and cumin seeds.
- To this, add sliced onions and saute until slightly browned.
- Add cashews and raisins. Mix well.
- Add the ground spice paste and saute until the raw smell of spices goes away.
- Add a little turmeric powder to it and mix well.
- Add the washed rice to this mixture and stir.
- Add mint leaves.
- Add water and cook covered until the liquid is absorbed and rice is cooked.
Notes
You may also cook the rice in a rice cooker. After adding water, transfer the entire mixture to the rice cooker and switch on the 'cooking' mode.
Unlike the standard 1:1 ratio of cooking rice, I add only 1.5 cups of water for 2 cups of rice. I do not like rice to overcook and stick together.
