Stuffed Okra Fry

Ingredients

  • 20-25 fresh okras
  • 1tsp coriander powder
  • ½tsp red chili powder
  • ½tsp turmeric powder
  • 1tsp fennel seed powder
  • 1tsp dry mango powrder
  • 3tbsp oil
  • ½tsp cumin seeds
  • Salt, to taste
  • Coriander leaves, finely chopped, a handful

Instructions

  1. Wash and pat dry the okras.
  2. Cut off the head and bottom tip. Make a small slit in the middle careful not to split into half.
  3. Add all the spice powders and salt in a bowl and mix well.
  4. Stuff the spice masala in each of the okras.
  5. In a pan, add oil and crackle cumin seeds.
  6. Place the okras and cook in low heat for about ten minutes, stirring in between.
  7. Add coriander leaves and mix well. Serve hot.
