Holiday Fruit Cake

Ingredients

  • Dried mixed fruits –1 cup,chopped and soaked overnight in 30ml brandy
  • Unsalted butter – 200g
  • Granulated sugar – 1 cup
  • Egg – 3 whole eggs
  • Vanilla extract – 2 teaspoons
  • All purpose flour – 2 cups
  • Baking powder - 1 teaspoon
  • Almond flour or ground almonds – ½ cup
  • Salt – ¼ teaspoon
  • Blanched and peeled almonds and dried strawberry for decorating

Instructions

Prepare:

  1. Pre-heat oven to 160C/320F.
  2. Grease a round cake tin with butter.
  3. Place a baking paper.

Mix:

Wet Ingredients ->

  1. In a mixing bowl place sugar and butter. Mix/Beat with an electric mixer.
  2. When the sugar and butter is all airy and creamy add the eggs one by one.
  3. Add vanilla extract and mix well.

Dry Ingredients ->

  1. In a spearate mixing bowl, take sifted flour, baking powder, salt, almonds flour or ground almonds. Mix them with a spoon so that the baking powder mixes well.

Combine:

  1. Add the flour mix to the wet batter and fold in gradually with the spatula.

Arrange:

  1. In the greased and lined cake tin, pour the batter and rest for about 15mins.
  2. Decorate the top with blanched and peeled almonds.

Bake:

  1. Bake it in the pre heated oven at 160 C or 320 F for one hour.
  2. After an hour. reduce the heat at 150 C or 300F and bake for another 30 minutes. This cake requires low heat and some time.
  3. Once done insert a toothpick at the center to check. If it comes out clean you are ready. Cool it off on a wire rack once it’s done.
