Drumstick Stir Fry | Muringakka Thoran

Ingredients

  • 350 gms Drumsticks
  • 1/2 cup Shallots, cut in roundels or finely chopped onion
  • 2 Green chilies, chopped
  • 2 sprigs of Curry leaves
  • 1/2 tsp Turmeric powder
  • 1/2 tbsp Red chili powder
  • 1/2 tbsp Coriander powder
  • 1/4 cup Water
  • Salt, to taste
  • 1/4 cup Grated coconut
  • 1/2 tsp Cumin seeds
  • 2 tbsp Coconut oil
  • 1 tsp Mustard seeds
  • 2-3 Dry Red chilies

Instructions

  1. Heat a tablespoon of oil in a pan.
  2. Add chopped shallots or onions, curry leaves, and chopped green chilies and saute until tender.
  3. Add the drumstick pieces and season well.
  4. Add turmeric powder, Red chili powder, and coriander powder.
  5. Mix well and add a quarter cup of water.
  6. Cover and cook in low flame for about five minutes.
  7. Coarsely grind (or Pulse in a mixi), grated coconut and cumin seeds.
  8. Add this to the drumstick, mix and cook until dry.
  9. Prepare the tempering by adding mustard seeds, dry red chilies, and urad dal.
  10. Add it to the drumstick. Easy-peasy!
  11. Serve hot as side-dish to rice.
