A simple and tasty side dish to rice
Ingredients
Scale
- 1 medium Potato
- 200 gms Ivy Gourd/Kovakka/Tindora
- 1/2 + 1/2 tsp Turmeric powder
- 1 tbsp Coconut oil
- 1 tsp Mustard seeds
- 2 sprigs of Curry leaves
- Salt, to taste
- Water, to cook potatoes
Instructions
- Slice the potatoes and Ivy Gourd into thin strips, like french fries.
- Cook the potatoes until 3/4th done in little water.
- Add a little salt and turmeric powder too. Strain and keep aside.
- In a pan, add coconut oil and when hot, add mustard seeds.
- When it pops, add curry leaves.
- To this, add cooked potatoes and ivy gourd.
- Season and add a little turmeric powder too.
- Mix well and let it cook for about 5-7 minutes until the vegetables are done.
- Serve as side-dish to rice.
