Description
Soft and spongy steamed rice cakes which are gluten-free, delicious and healthy
Ingredients
Scale
- 1 cup White Rice
- 3/4 cup fresh grated coconut
- A handful of cooked rice
- 1/4 tsp Salt
- 3 tbsp Sugar
- 1/2 tsp Cardamom powder
- 1/2 tsp Baking Powder
- Water, as required
- Oil, to grease the mould
Instructions
- Soak the rice overnight.
- Grind soaked rice, grated coconut, cooked rice and water to form a thick yet grain-free smooth batter.
- Add ground cardamom, sugar, a pinch of salt and baking powder. Mix well and keep aside for 15-20 minutes.
- Grease a round mould or cake pan with a teaspoon of coconut oil.
- Pour the batter until 3/4th full. Steam it in a pressure cooker or steamer for about 15-20 minutes. Insert a toothpick in the center to check if it is cooked properly.
- Top it with raisins, slice and serve while still warm.
