Description

Soft and spongy steamed rice cakes which are gluten-free, delicious and healthy


Ingredients

Scale
  • 1 cup White Rice
  • 3/4 cup fresh grated coconut
  • A handful of cooked rice
  • 1/4 tsp Salt
  • 3 tbsp Sugar
  • 1/2 tsp Cardamom powder
  • 1/2 tsp Baking Powder
  • Water, as required
  • Oil, to grease the mould

Instructions

  1. Soak the rice overnight.
  2. Grind soaked rice, grated coconut, cooked rice and water to form a thick yet grain-free smooth batter.
  3. Add ground cardamom, sugar, a pinch of salt and baking powder. Mix well and keep aside for 15-20 minutes.
  4. Grease a round mould or cake pan with a teaspoon of coconut oil.
  5. Pour the batter until 3/4th full. Steam it in a pressure cooker or steamer for about 15-20 minutes. Insert a toothpick in the center to check if it is cooked properly.
  6. Top it with raisins, slice and serve while still warm.
