Wayanadan Chicken Curry

Ingredients

  • 300gms Chicken, cleaned and cut
  • 1 Onion, sliced
  • 1 Tomato, sliced
  • 1 tbsp Ginger, finely chopped
  • 1 tbsp Garlic, finely chopped
  • 2 Green chillies, slit
  • 1/2 tbsp Red chili powder
  • 1/2 tbsp Coriander powder
  • 1/2 tbsp Chicken Masala powder
  • 1/2 tbsp Garam Masala powder
  • 1/2 tsp Pepper powder
  • Salt, to taste
  • 1/2 cup Water
  • 1/2 cup Coconut milk
  • 1 tbsp Coconut oil
  • 1/2 tsp Mustard seeds
  • 2 Dry Red chilies
  • 2 sprigs of Curry leaves

Instructions

  1. In a wok, place cleaned and cut chicken pieces.
  2. Add onion, tomato, ginger, garlic, slit green chilies, red chili powder, coriander powder, chicken masala powder, garam masala powder, salt and pepper.
  3. Mix well and keep it marinated for about five to ten minutes.
  4. Heat the pan and add about a cup of water. Mix well. Cook covered for about 20-25 minutes.
  5. Add half a cup of coconut milk and mix well. When it is just about to boil, remove from fire.
  6. In a small pan, add a tablespoon of coconut oil.
  7. Add mustard seeds and when it pops, add dried red chillies and curry leaves.
  8. Add this tempering to the curry. Mix well and let it sit for about ten minutes before serving.
