- 300gms Chicken, cleaned and cut
- 1 Onion, sliced
- 1 Tomato, sliced
- 1 tbsp Ginger, finely chopped
- 1 tbsp Garlic, finely chopped
- 2 Green chillies, slit
- 1/2 tbsp Red chili powder
- 1/2 tbsp Coriander powder
- 1/2 tbsp Chicken Masala powder
- 1/2 tbsp Garam Masala powder
- 1/2 tsp Pepper powder
- Salt, to taste
- 1/2 cup Water
- 1/2 cup Coconut milk
- 1 tbsp Coconut oil
- 1/2 tsp Mustard seeds
- 2 Dry Red chilies
- 2 sprigs of Curry leaves
Instructions
- In a wok, place cleaned and cut chicken pieces.
- Add onion, tomato, ginger, garlic, slit green chilies, red chili powder, coriander powder, chicken masala powder, garam masala powder, salt and pepper.
- Mix well and keep it marinated for about five to ten minutes.
- Heat the pan and add about a cup of water. Mix well. Cook covered for about 20-25 minutes.
- Add half a cup of coconut milk and mix well. When it is just about to boil, remove from fire.
- In a small pan, add a tablespoon of coconut oil.
- Add mustard seeds and when it pops, add dried red chillies and curry leaves.
- Add this tempering to the curry. Mix well and let it sit for about ten minutes before serving.
