Garlic Noodles

Description

Chilli Garlic Noodles is a tasty, easy-to-make Chinese noodles dish where cooked noodles are stir-fried with a spicy chili paste, burnt garlic, and veggies of your choice.


Ingredients

200gms Dry Noodles (or Ramen Noodles)

1/4 cup Sesame Oil

4-5 Dry Red Chilies

8-10 Garlic Cloves, large, finely chopped

1/4 cup Green Bellpepper, julienned

1/4 cup Red Bell pepper, julienned

1/4 cup Yellow Bellpepper, julienned

1/4 cup Carrots, julienned

2 tsp Light Soy Sauce

1 tsp Rice Vinegar

1/2 tsp White or Black Pepper, powdered

Salt

1 tsp Sugar

Spring Onion Greens, for garnish

1/2 tsp Fish Sauce (optional)


Instructions

Cook the noodles according to the instructions on the packet. I'd still cook it only until 75 percent done or until the noodles are separated.

Drain and immediately rinse in cold water. Add a tablespoon of oil and gently mix. Keep aside.

Soak 4-5 dry red chilies in hot water for 5 minutes. Once done, grind to make a paste.

To a wok, add sesame oil. Once hot, add finely chopped garlic. Saute until brown.

Turn the heat to low and add the ground chilies. This is the chili paste. You may use a teaspoon to all of the chili paste for this recipe. Adjust the spice level according to your taste. Mix well. 

To this, add the chopped vegetables. Saute for a minute.

Add the sauces and seasonings. Mix well. 

Add the noodles and gently mix with the help of a tong. Cook for a minute more.

Garnish with spring onion greens and serve with a favorite side of your choice.

Notes

Cook the noodles only until 75 percent done or until the noodles are separated. This ensures that the noodles aren't turned mushy once you stir-fry with veggies and sauces.

Once you drain the noodles from water, immediately rinse in cold water. Add a tablespoon of oil and gently mix. This will make sure that it doesn't cook further and that the noodles strands don't stick to each other. 

Adjust the amount of chili paste you add to the noodles according to your taste. I added all of it and it resulted in a spicy noodle.
