Description

Zafrani Pulao is an exotic and delicious Indian Style Saffron Rice. It is easy to make and is light on the palate without compromising on flavors.


Ingredients

Scale
  1. 1 cup Basmati rice
  2. 1/8 cup warm Milk
  3. 2 pinches of Saffron
  4. 2 tbsp Ghee
  5. 1 Bayleaf
  6. 23 Cloves
  7. 1” inch Cinnamon stick
  8. 3 Cardamom pods
  9. 10 Almonds
  10. 10 Pistachios
  11. 10 Cashews
  12. 10 Raisins
  13. 1 tbsp Sugar or Condensed Milk
  14. 1.5 cups Water
  15. Fried Onions, for garnish

Instructions

  1. Wash and soak basmati rice for 30 minutes to 45 minutes.
  2. Soak saffron strands in warm milk and keep aside for about 20 minutes.
  3. Heat ghee in a thick-bottomed vessel and add bay leaves, cloves, cinnamon, and cardamom.
  4. Coarsely crush almonds and pistachios and add this to the pan. Mix well.
  5. Add the rice and mix with gentle hands.
  6. Pour water and add sugar or condensed milk. Mix well.
  7. Cook the rice until done.
  8. Add saffron milk and let it rest for about ten minutes.
  9. Fork the rice and garnish with fried onions, cashews, and raisins.
