Kadachakka Bajji | Breadfruit Fritters

Description

Kadachakka Bajji or Breadfruit Fritters is a popular South Indian tea time snack made by batter-fried breadfruit slices.


Ingredients

Scale
  1. 250 gm Breadfruit
  2. Oil, for deep frying

Marination:

  1. 1/2 tsp Red chili powder
  2. 1/4 tsp Turmeric powder
  3. Salt

Batter:

  1. 1 cup Gram Flour (kadala maavu/besan)
  2. 1 tbsp Rice Flour
  3. 1 tsp Red Chili powder
  4. 1/4 tsp Turmeric powder
  5. Salt, to taste
  6. 1/4 tsp Asafoetida (kaayam/hing)
  7. 1/4 tsp Carom seeds (omam/ajwain)
  8. Baking soda, a pinch
  9. Water, about 1/4 cup
  10. 1 tbsp Kasuri Methi, optional

Instructions

  1. To make breadfruit fritters, first, prepare the breadfruit. Remove the outer green skin and chop lengthwise. Quarter each slice lengthwise again to get wedges. Slice the breadfruit wedges into quarter-inch triangles. Wash these slices well and pat dry.
  2. Marinate the breadfruit slices with salt, red chili powder, and turmeric powder.
  3. Steam the marinated slices for about 5-8 minutes in a cooking steamer. Remove and allow it to cool completely.
  4. To make the batter for fritters, in a bowl, add gram flour, rice flour, chili powder, turmeric powder, salt, asafoetida, carom seeds, baking soda, and water. You may also add kasuri methi now. 
  5. Heat oil in a pan for deep frying. Dip each slice in the batter and deep fry in hot oil. Keep the oil in medium-high and keep flipping the breadfruit slices to cook both sides evenly. Cook until golden brown.
  6. Remove and serve warm with ketchup or chutney.

Notes

You may choose to not steam the breadfruit slices. Chop the breadfruit into triangles, make the batter, dip, and fry them instead. Steaming the breadfruit ensures that they are cooked properly.

Do not steam for long, Breadfruits have 70% water content. So, if steamed long, it will turn mushy.

You can either steam the breadfruit in a cooking steamer or use a pressure cooker or microwave. If you are cooking in a pressure cooker, cook for a single whistle or microwave for about two and a half minutes.

For the batter, add only just enough water so that the batter isn't too runny or thick. It should coat the breadfruit slices just right.
