Been a long time since I've posted here. No excuses though. So, how have you all been? Here's a personal favorite from the land of Kerala- Chemmeen Ularthiyathu aka Shrimp Roast.

    Shrimp Roast

    Ingredients:

Shrimps- 500gms, Oil- 3tbspn (Coconut oil preferred), Kokum- 2, Finely chopped ginger- 1tbsp, Finely chopped garlic- 2tbsp, Onion- 2, Tomato-2, Chilly powder- 1tbsp, Turmeric powder- ¼tbsp, Coriander powder- ½tsp, Garam Masala- ½tbsp, Salt, Water

    Method:

Cook covered the shrimp in a cup of water, salt, kokkum and little chilly powder. Keep aside.

In a pan, add oil, ginger and garlic. Saute and add chopped onion. Saute till golden brown.

Add the masala powders and mix well.

Add finely chopped tomatoes and cook till oil oozes out.

Add shrimps, mix well and cook covered for 3-4 mins.

Garnish with coriander leaves. Serve hot with rice.

Sorry dear, I didn't mean to offend you. I actually LOVE shrimp though I am not familar with all the spices mixed together, at least for me as I have a relatively mild spicyness tolerance level! 😉 It does look good though! 🙂 <3
