    Potato Saute

    I hated potatoes- right from my childhood! I know what you must be thinking. But that was how I was. My Mamma had tried N number of ways to make me eat some. But no, I won't unless it is in the form of a Lays Packet. 😛
    But now, I understand that it is one of the easiest veggies to cook and with such versatility and taste. 🙂 My adventure with Potatoes continue, especially when I’m too lazy to cook. Today is one of those days, Come on, you can’t blame me, esp. since I’m sick. Migraine
    This is a classic version of Kerala cuisine and adds a unique flavour if Coconut oil is used.
    Adapted from a Famous Cookbook.
    Potato Saute

    Ingredients:
    Potatoes- 3- cut into cubes
    Salt- 1tsp
    Turmeric powder- ½tsp
    Red chillies-3- grounded
    Coconut oil- 2tbsp
    Onion- 1
    Garlic- 3cloves
    Curry leaves
    Crushed Peppercorns/Pepper powder- 1tsp

    Method:
    Boil cubed potatoes in about 6 cups of water with salt, pepper and grounded chilies for about 5mins.
    Remove and set aside to cool.
    Heat oil in a pan and sauté onion for a minute. Add garlic and curry leaves and fry for a minute more.
    Add pepper powder and potatoes and stir fry until potatoes are crisp and golden.
    Oh yeah, done! Cheeky Smile
