Haven't I mentioned before(when I posted Claypot Chicken) that I loooooooove Chinese? Given an option to have only one kind of food throughout my life, I will opt for Chinese. And this is my absolute favorite dish. Simple and easy to make, if you like the taste of Garlic this is a sure winner! I have seen many versions of this recipe and tried the one mentioned below.

    Burnt Garlic Rice

    Ingredients:

2 cups rice, cooked and cooled,

8-10 cloves of garlic, thinly sliced or chopped,

    2-3 green chilies, chopped,

1 tiny piece of ginger, grated,

1 cup thinly cut/cubed vegetables, like carrot, beans, bell peppers

    salt and pepper to taste,

    1 teaspoon oil

    Method :

Keep the vegetables chopped and ready.

Heat oil in a wok. Saute the garlic till they turn golden brown. Remove half the garlic, keep aside.

Add ginger and green chili. Saute all on high.

Add your veggies, along with salt. Keep frying on a high flame till almost done.

Add rice, along with burnt garlic and pepper powder.

Mix well and do not to smash the rice.

Serve hot with any Chinese-style dish.

I love fried rice and always make it the next day after we have had rice. It is very forgiving and you can be as creative as you like and use up bits and pieces of what you have in the fridge. Great for lunch the next day too.

Oh my, that sounds so good!!!! I want to eat this so bad. I am on a diet right now that doesn't include rice. 🙁 One day I will have to cheat and try this recipe then jump back on the dieting band wagon! ♥

Love the aroma of burnt garlic. Remember having this in some dish at a restaurant some time ago. I can smell it even now, though dont remember the dish it was used in 😀
