Let me begin by telling you what Mezhukkupurati means. Mezhukku means ‘fat’ and varatti means ‘roast’. Hence, it is vegetables roasted in fat. I looooove string beans or snake beans. As a child, this was the only vegetable which I loved eating other than carrots. Serve hot with rice and accompaniments.
Ingredients:
String beans - 2 cups, cut into 1" long pieces
Red chilies- 3
Turmeric powder- ½tsp
Salt
Water- 1 cup
Oil- 1 tbsp
Shallots- 4 or 5, sliced
Garlic- 4 cloves, crushed
Curry leaves- few
Method:
Cook the chopped string beans in water, along with red chilies, turmeric powder and salt. Set aside when dry.
Heat oil in pan and add shallots, garlic and curry leaves. Saute for a few minutes.
Add the cooked beans and stir fry until it is coated well with shallots.

It is a tad bit difficult to cook the beans. make sure it is cooked well before adding to the shallots mixture.
