    Okra Stir Fry- North Indian Style

    It's okra season again. By now you would be knowing that I'm a fussy eater and I've a natural inclination towards non-vegetarian food. But P loves his veggies as well as the meats. And he prefers to have a veggie stir fry for his lunch along with a chicken curry or fish fry.

    Okra Stir- Fry or Bhindi Masala as it is called, is a popular dish among the North Indian curries. It is easy to make and can be served as a side dish to rice or rotis. I 've read that okras are good for diabetes and weight loss. That makes me thinking now.. 🙂

    Bhindi Masala

     

    Ingredients:

    Oil- 3tbsp
    Garlic -8 cloves, thinly sliced
    Chillies- 4, chopped
    Onion-1, sliced
    Okra- 300gms, sliced ⅓" thick
    Garam masala- 1 and ½ tsp
    Coriander powder- 1 tbsp
    Tomato- 1, chopped
    Salt, to taste

    Method:

    Heat oil in a skillet.

    Add garlic, chillies, and onion and saute until golden, say 4–6 minutes.

    Add okra, garam masala, coriander, tomato, salt, and ⅓ cup water.

    Cook covered until okra is tender.

      My husband likes okra fried with onions or potatoes...But I like the bengali style okra made with mustard paste and tomatoes....Thanks for sharing this

      Sounds delicious. I've never tried Okra but now I'm curious to know what it's like. I just tried kohlrabi recently so it's never too late to try new things.

      Okra is one my favorite veggie. This was the most frequent veggie that I used to take for my lunch in college... something like 4/6 days!! 😀
