    Cilantro Lime Chicken and Rice

    Cilantro Lime Chicken and Rice is a super easy and quick recipe that'll take only about 20 minutes to prepare! Must try, especially during winters when you crave a hug-in-a-bowl, one-pot dish! This is also best as bachelors recipe.

    Cilantro Lime Chicken and Rice1

    Ingredients:
    1 ½ cups of Cooked White Rice or Leftover Rice
    1 medium-sized Onion, finely chopped
    6 Cloves of Garlic, minced/finely chopped
    1 teaspoon of Cumin powder
    1 teaspoon of Chili Powder
    150gms of Boneless chicken, cut into bite size pieces,
    3 tablespoon of Vegetable Oil
    ½ cup of Chicken Stock/water
    Zest of ½ Lime and Lime Wedges on the side
    ½ cup of Cilantro, chopped
    Salt and Pepper to taste

    Method:

    In a bowl, mix together the chicken chunks with cumin powder, ½ of the chopped garlic, chili powder, salt and pepper. Set aside.

    Heat oil in a large skillet and add the marinated chicken. Cook for a few minutes, stirring in between.

    Add onion and remaining garlic and saute until the onions become translucent, say 7 mins.

    Add chicken stock and cook down so that it is reduced by half.

    Add the rice and and mix well.  a good stir and season with salt and pepper to taste.

    Add lime zest and cilantro and stir it in. Squeeze a little lime juice over the top when ready to serve.

    Chef says: Make sure you use a fork to mix the rice with the gravy/sauce. This will help remain the rice grains separate and not mashed.

    Check for seasoning after adding the rice. If required, add salt and pepper.
