We live in a fast-paced world where one do not have time to even stand and gaze. Forget exercise! One cannot even maintain a proper diet or include healthy foods in his daily need. We go to our office, sit for 9 hours and the sedentary lifestyle has brought more harmful effects than we have ever thought of. Young men and women are easily prone to diabetics, which was unheard of, a decade ago.

Adani Wilmar Ltd. has introduced a revolutionary health product in the form of Fortune Vivo Diabetes-Care Oil, capable of reducing high blood sugar and control Type 2 Diabetes. Fortune Vivo is a blend of rice bran oil and sesame seed oil in 80-20 ratio. According to studies and research, it can help in modifying the underlying cause of insulin resistance and weight gain, thereby helping in type 2 diabetes management.

The oil doesn’t have dark color or stronger aroma as that of sesame oil. A bit more thicker than the usual vegetable oil, I guess you can use it in lesser quantity while cooking.

Ingredients:

Baby potatoes: 100gms (cut into half and parboiled in salt)

Cashew nuts- a handful roughly chopped

Ginger and garlic- a tbsp each, finely chopped

Capsicum- 1 cubed (of any color)

Schezwan sauce- 2tbsp

Water- 1/8 cup

Soy sauce- 1tbsp

Sugar- 1 tbsp

Salt- to taste

Oil- for deep frying + 2tbsp

Scallions- chopped, to garnish

Instructions:

Deep fry the parboiled baby potatoes. Remove and keep them aside.

In a pan, heat two tbsp of oil and add chopped cashews. Saute.

When lightly browned, add chopped ginger and garlic. Mix well.

Add capsicum, schezwan sauce, sugar and a dash of water. Stir it in.

Add soy sauce and baby potatoes. Mix and sauté again.

Garnish with chopped scallions- green and white.

Serve hot with steamed rice.

    The dish looks tempting. I am not much of a cook, though I am the one who does all the cooking at home but I love to eat tasty food. Well, it sounds silly for who doesn’t like tasty food 😀
