Honey Chilli Potatoes is an Indo-Chinese dish where deep fried potato fingers are tossed in honey and chilli sauce. It can be served as an appetizer or starter with a drink or as a side dish to fried rice or noodles. These are quite popular in Indian restaurants. But mostly they add MSG or Ajinomotto to the dish which is harmful for health. So why not prepare it at home without adding these?

You can always make crunchy potatoes and they will not be soggy. First things first. One should always slice the potatoes in uniform fingers. Choose big potatoes for getting the desired result. There are two methods to make crunchy potatoes. One is to deep fry at a go. The other is to double fry, where in the potatoes are fried half way through at first, removed from oil and again fried in high heat. This will enable the fingers to not soak in too much of oil.

Ingredients

Scale
  • Potatoes – 2 large , sliced into fingers/wedges
  • Garlic paste – 1 tsp
  • Chilli powder – 1 tbsp
  • Corn flour – 3 tbsp
  • Salt – to taste
  • Oil – for deep frying
  • Garlic – finely chopped, 2 tbsp
  • Spring onion – greens and whites, 2 tbsp each
  • Dry red chilli flakes – 2tbsp
  • Vinegar – 1 tsp
  • Honey 2–1/2 tablespoons
  • Red chilli sauce – 1 tsp

Instructions

  1. Combine the potatoes, garlic paste, chilli powder, cornflour and salt in a deep bowl and toss gently.
  2. Heat the oil in a deep non-stick pan, and deep-fry a few potato fingers at time till they turn crisp and golden brown in colour from all the sides. Drain on an absorbent paper.
  3. In a wide pan, heat a tbsp of oil and add garlic and spring onion greens. Saute.
  4. Add chilli flakes, vinegar and sauce. Mix well. Cook for about a minute.
  5. Add honey and spring onion greens.
  6. Remove from heat and add the fried potato fingers. Toss gently.
  7. Serve hot.

Notes

You can add tomato sauce instead of red chilli sauce for a tangier version.
