    Sweet Corn Chicken Soup is a light and creamy soup made with creamed sweet corn, chicken stock and egg drop. It is one of the simplest soup recipes that one can make at home.

    Chinese chicken and sweet corn soup is one of the most sort after soups for most of us in restaurants. Take me for an example. Until recently this was the only soup that I would take. And there was no compromise on that. But I believe things change for good. Even in the case of a soup. So, my palate has become affable and I'm welcoming it.

    When a dear blogger friend Modern Gypsy (as I fondly address her by her blog name) asked whether I have any soup recipes in this space, I stood aghast. I didn't have one. And that's bad. So, since then I had been wanting to make some.Β I told you that winter is already here and what but a bowl of piping hot soup can drive the cold away. At least temporarily. So, this one's for you, friend. Meanwhile, you should check out her blog. She's one passionate artist and she is also into Tarot reading.

    If you can grab your hands on cream style corn, this is quite easy and quick to make. However, you can also use fresh sweet corns available in packets. All you need to do is grind a cup of corn with a teaspoon of water. But do not make it into a smooth paste. Pulse for 5 seconds or so.

    Description

    Sweet Corn Chicken Soup is a light and creamy soup made with creamed sweet corn, chicken stock and egg drop.


    Ingredients

    • Creamed corn - 1 can of 400gm or Sweet corn - 1 cup
    • Chicken stock - 1 cup
    • Cooked Shredded chicken - Β½ cup
    • Water - 1cup
    • Ginger - 1 teaspoon minced
    • Garlic - 1 teaspoon minced
    • Corn flour, - 1 tablespoon mixed in Β½ cup water
    • Soy sauce - 1tsp
    • Green chillies- 1, finely chopped (optional)
    • Egg - 1, whisked
    • Salt and pepper - to taste
    • Spring onion greens - for garnish

    Instructions

    1. In a saucepan, add chicken stock, water, creamed corn, soy sauce, ginger and garlic and bring it to a boil.
    2. Add in the salt and pepper. Turn down the heat to medium.
    3. Add in the cooked shredded chicken and cook further for 5 mins.
    4. Add the corn flour slurry and cook till it thickens stirring occasionally.
    5. Pour in whisked egg into the soup slowly, but stirring simultaneously. This enables to cook in ribbons throughout the soup. Cook further for 5-10 mins and check the seasoning.
    6. Garnish with spring onion greens and serve piping hot.

      Oh I can't wait to try this one. I love Indo Chinese soups.

      Also, I am in awe of how frequently you manage to post. I know how much planning and work goes behind a food blog, I had registered mine ages ago (it is still registered under my name) but never got around to posting on it because of lack of time.

      But you seem to manage 2 blogs and a full time job so very well. I hope to be able to do the same soon, because I really do love posting about food and Shanaya Tales is kind of in a different place.

      THIS is my absolute Favourite toooooooooooooooooo πŸ™‚

      I have a little chinece shop takeaway and its a permanent order every tuesdy-thrusday-friday and sunday .. I get two chicken sweetcorn soups .. because on these days I come back home late πŸ™‚ and can afford to stop by to pick it up.. I dont even have to pay the guy now , sometimes pay him together πŸ™‚
