    Falooda- Malabari Style

    Falooda is a dessert or a drink made by layering milk, ice-cream, different fruits and nuts. It is said to have it's origins from Iran and is also popular in Northern parts of India. But, it varies in taste. This recipe is how the dish is prepared in Kerala, especially the Malabar region. Looks pretty, isn't it? It's refreshing in this summer heat and is also a way to allure kids into having fruits and nuts.

    Ingredients:

    1 cup milk, 1 cup milk powder, 1 tin condensed milk

    1 ripe plantain, 2tbsp strawberry syrup, Vermicelli - cooked in water and a tbs of sugar, a handful of  Pearl tapioca(Sabudana)- cooked in same sugar water as that of Vermicelli

    Vanilla Icecream- 1 ltr, Dates, Grapes, Black cuscus, Jelly

    Method:

    In a bowl, mix milk powder, hot milk and condensed milk. Grind plantain in a food processor and add to this mixture.

    Cook this mixing throughout till about to boil. It should be in low flame.

    Add cooked vermicelli and pearl tapioca. Mix well. Set aside.

    Setting in Glass:

    Add 2 tablespoon of the above mixture. Atop, add chopped fruits in the following order- apple, pomegranate, dates, a tablespoon of strawberry syrup, a tablespoon of the cream set aside, almonds, grapes, nuts, jelly, vanilla icecream, cuscuss and tuti-fruity.

    Set in a bowl:

    Onto the prepared cream, add fresh fruits, nuts and strawberry syrup. Add icecream and serve.

      Love your recipe... not that huge a fan of faloodas, but I have tried to make it once. I used store bought rose milk along with ice cream and nuts and cuscus.

      It was delicious, but setting it was a chore.

      Falooda is a dessert, if you look at it technically, but practically it is an any-time snack! This exciting combination of sweetened rose-flavoured milk with falooda sev, subza seeds, vanilla ice-cream and all the works is a delicacy that appeals to all. It is quite sumptuous and satiating, and you will often find people stopping by at a roadside vendor to have a glassful of Falooda to keep them comfortably going till the next meal. Indeed, what a tasty way to chase hunger away!
