A Cutlet or Croquette is a popular snack made from grounded meat or vegetables. Chicken Cutlets are my favorite. We have a famous food chain in Kerala known as the "Indian Coffee House". Again, popular for its Ghee Roast, Kerala Poratta and Chicken Curry, we also get yummy Chicken Cutlets there. My fond memories go back to those days when we visited these restaurants on our way to Dad's home. Haa! South Indian Filter Coffee and hot Chicken Cutlets! You simply go Yummmm....
This recipe is based on how we make in Kerala- the southern state of India. Easy to make, this is undoubtedly going to be your go-to dish when you've guests at home.
Print- 200 gms Boneless Chicken minced
- ΒΌ cup Onion finely chopped
- Β½ teaspoon Ginger Garlic paste
- 2 Green chillies finely chopped
- 1 Potato boiled and mashed
- 1 teaspoon pepper powder
- 1 teaspoon Garam Masala
- Β½ cup breadcrumbs
- 1 egg white beaten
- 1 sprig curry leaves finely chopped
- oil for deep frying
- Salt to taste
- Cook the minced chicken in 1 teaspoon oil. Remove to cool.
- In a pan, add 2 teaspoon of oil and add onion. Saute till soft. Add green chillies, ginger-garlic paste and curry leaves. Saute again.
- Add the cooked chicken and mix. Add pepper powder. garam masala powder, salt. Mix and cook for a couple of minutes. Remove to cool.
- Add mashed potato and mix well. Make desired shapes from the mixture- heart, balls or circles for example.
- Dip each in beaten egg whites, then coat with breadcrumbs (unfortunatley I didn't have them and coated with powdered corn flakes), and deep fry in oil.
- Serve with tomato ketchup and chopped onion.

Chicken cutlet is a very easy to make dish. One advantage of this is you can prepare the keema (cutlets before frying) & store it in your freezer for 1 month. It comes to your rescue when you have a surprise guest for lunch or dinner. It can be also served as an evening snack.

We do a very similar dish here in Italy, to reused meat leftovers. We don't use spices, but all the rest is basically teh same. We call it 'polpette'. My draddad usd to do them π

I tried a few without breadcrumbs. But failed miserably! They were falling apart.
Please tell me if you used any other ingredient as a binding agent.
