Thai Corn Peanut Cutlets is a quick and easy to prepare appetizer/snack made from sweet corn kernels and peanuts. The distinct flavors of juicy sweet corns and roasted peanuts make this cutlet different from the traditional ones!

Thai Corn Peanut Cutlet Recipe

Last February, the husband decided to surprise me. Well, he often plans something big but I always find out about it well before time. So this time, he decided to break the news to me weeks before my birthday; that he wanted a vacay in Thailand. That actually was the shock of my life but I was happy to take care of all the planning part – places to visit, things to do, and hostel/hotels to stay. Needless to say, those fifteen days in Thailand is one of the most memorable days in our five-year-old marriage.

Apart from pristine white beaches, limestone cliffs, and dynamic cities, what caught our attention was the yum food. Thai food is a celebration. Hardcore foodies that we are, we gobbled on delicious fried rice, Pad Thai, curries, and desserts. Yes, we were exposed to the abundance of delectable flavors of Thai cuisine. One of the few vegetarian dishes we tried includes this Thai Corn Peanut Cutlet and it was definitely exquisite.

Thai Corn Peanut Cutlet snack recipe

Thai Corn Peanut Cutlets Recipe:

Thai sweet Corn Peanut Cutlet

Ingredients:

1 medium potato, boiled and mashed
1/4 cup peanuts, roasted
1/4 cup sweet corn kernels
2 tablespoon corn flour
2 garlic, minced
1 teaspoon lime juice
2 dry red chilies
1/2 teaspoon red chili powder
1 teaspoon soy sauce
4 tablespoons of olive oil
1 tablespoon chopped coriander leaves
Salt, to taste
Coriander leaves, to garnish

Method:

Grind coarsely (Pulse for a few seconds), the dry red chilies, roasted peanuts, and sweet corn kernels.
Mix together, the mashed potato, chili-peanut-corn mixture, corn flour, minced garlic, red chili powder, lime juice, soy sauce, salt, coriander leaves, and a tablespoon of oil.
Rub little oil in your palm, take a scoop of the above mixture and make small patties for cutlets.
Heat the remaining oil in a pan and shallow fry the cutlets. You can also deep fry them.
Serve with ketchup and a beverage of your choice.
