Navratri has begun today and I'm hoping to bring nine vegetarian Keto recipes for you over the days. As you know by now, we are eliminating the main carb sources like rice, wheat, dals/pulses, and root vegetables in Keto diet and is leaning towards protein and fats. Think protein and it is meat, seafood, eggs, and chicken that pops in your head. But Paneer or Cottage Cheese is also a phenomenal source of protein. It makes a perfect addition to Keto diets, without a doubt.
So, today it is Paneer Steak with Spiced Cauliflower Rice. Sounds exotic, I know, but it is one of the simplest recipes that you can try at home. All you need is some cottage cheese aka paneer and everyday Indian spices and hung curd.
How to Make Cottage Cheese or Paneer Steak at Home
First, we are going to cut the steak horizontally, about one-inch thick. I used a cookie-cutter to get a uniform wavy shape.
Next, we will be marinating the "steak". For this, sprinkle some ground pepper, chili flakes, red chili powder, and garam masala powder (or vegetable masala powder). To this, ginger-garlic paste and a tablespoon of hung curd. Marinate gently without crumbling the paneer pieces.
Heat a grill pan and a dollop of butter. Place the paneer steaks and top it with the extra marinade, if any. We do not want to waste all that goodness. Grill both the sides for about three minutes or so until we get a nice golden crust.
With just a few simple spices, you can jazz up the Cauliflower Rice. To prepare the Spiced Cauliflower Rice, grate a cup of cauliflower. Saute finely chopped garlic, onions, and bell peppers in a tablespoon of olive oil. Once slightly cooked, add the grated cauliflower to it. Season and add crushed pepper, basil leaves, and chili flakes. Saute till the cauliflower is cooked. That's it.
To plate the dish, place a cookie-cutter on a plate. Place a paneer steak in it, top it with spiced cauliflower rice and press it down. Place the last paneer steak and pull out the cutter.
