Chicken Tangdi Kabab in an air fryer is one of the easiest Indian air fryer recipes you can make.

Tangdi Murg Kabab can be literally translated to grilled chicken drumsticks or legs. It is a popular dish across India and around the globe and there are many variations to it and many ways of making it.

Tangdi Kabab is a sort-after street food as well as a most ordered food in any restaurant.

Chicken Tangdi Kebab is traditionally made in a tandoor. It results in a distinct smoky flavor and provides the much-needed char to the dish.

You can also bake the chicken drumsticks in an oven, grill in a barbecue, fry on a stovetop, or use an air fryer for a healthier version.

Different Types of Chicken Tangdi Kabab

There are many ways you can prepare Indian Chicken Drumsticks.

You may use tandoori masala for a tandoori version. Use a green marinade of mint and coriander leaves for making Hariyali Chicken Kebab. A marinade with hung curd, cream, and butter can be used to make Malai Murg Tangdi Kabab. Or marinate with basic Indian spices and fry in coconut oil to make Kerala Thattukada Chicken Fry.

I have also shared another recipe for Tangdi Kabab on the blog where gram flour or besan is added to the marinade. It lends a crisp texture to the chicken.

We recently got an air fryer and I confess I was intimidated by it first. But I slowly warmed up to it by trying out some simple recipes like frying some frozen ready-to-cook nuggets and french fries. Once I realized how an air fryer worked I was confident to try out more elaborate recipes.

Chicken Tangdi Kebab in an air fryer is a boon to mankind. Nope, I am not exaggerating but that’s how I feel. It results in soft and juicy chicken drumsticks in a much healthier way. One can indulge in these drumsticks guilt-free!

These can be served as starters or appetizers as well as a side to your favorite Vegetable Pulao, Indian Rice Pilaf, or Biriyani.

Preparation: Tangdi Murg Kebab

There are two marinations for preparing this kebab. Marination is the key to making the chicken juicier and succulent. It helps in tenderizing the meat making the drumsticks soft.

Before marinating, however, make gashes on the drumsticks so that the marinade can reach deep inside the meat.

For the first marination, add a tablespoon each of ginger garlic paste and lemon juice, and some salt. Mix well and keep aside for at least 15-30 minutes.

For the second marination, add three fourths hung curd, a tablespoon of Kashmiri red chili powder, a quarter teaspoon of turmeric powder, half teaspoon each of garam masala powder and dry mango (aamchur) powder, a tablespoon of oil and all the ingredients again of the first marinade. Take your time to mix all the ingredients together on the drumsticks. Keep aside for at least 5-6 hours or overnight.

The marination remains the same even if you prefer the stovetop, tandoor, or oven cooking method.

Chicken Tangdi Kabab in an Air Fryer:

  1. Preheat the air fryer to 200 C or 390 F for 10 minutes.
  2. Place the drumsticks on the air fryer basket. Do not overcrowd.
  3. Air fry for about 15 minutes. After the 10-minute mark, remove the basket and flip the drumsticks. Cook for the remaining 5-7 minutes.

Chicken Tangdi Kebab in an Oven:

  1. Preheat the oven to 200 C or 390 F for 10 minutes.
  2. Line an aluminum foil in a baking tray and place a wire rack over it. This is to catch the marinade droppings while baking.
  3. Place the drumsticks on the wire rack.
  4. Bake or grill for about 15 minutes.
  5. Remove from the oven and brush with some butter.

Chicken Tangdi Kebab on a Stovetop:

  1. To prepare Tangdi Kabab on a stovetop, heat about 2-3 tablespoons of oil in a pan or kadhai.
  2. Add the marinated chicken drumsticks and cook until the chicken is done. It will take about 15-20 minutes.

How To Smoke The Chicken

  1. To smoke the chicken for a grilled flavor, place a live coal piece in a steel bowl and keep on the pan/kadhai where the chicken is cooking.
  2. Drizzle a teaspoon of ghee and cover immediately when smoke arises.
  3. Let it remain for about 5 minutes.

Description

Chicken Tangdi Kabab or Grilled Chicken Drumsticks in an air fryer is one of the easiest Indian air fryer recipes you can make.


Ingredients

Scale

8 large Chicken drumsticks

First Marination:

1 tbsp Ginger garlic paste

1 tbsp Lemon juice

Salt

Second Marination:

Ingredients of the first marination +

3/4 cup Hung curd

1 tbsp Kashmiri red chili powder

1/4 tsp Turmeric powder

1/2 tsp Garam masala powder

1/2 tsp Dry mango powder (Aamchur)

1 tbsp Mustard oil


Instructions

Make gashes on the chicken drumsticks.

Add the ingredients of the first marinade- ginger garlic paste, lemon juice, and salt to the drumsticks and combine well. Set aside for at least 15-30 minutes.

Add the ingredients of the second marinade- hung curd, Kashmiri red chili powder, turmeric powder, garam masala powder, dry mango powder, oil, ginger garlic paste, lemon juice, and salt to the drumsticks and marinate for about 5-7 minutes. Keep aside for at least 5-6 hours to overnight.

Preheat the air fryer to 200 C (or 390 F) for 5 minutes.

Once ready, pull the air fryer basket and add the marinated chicken drumsticks. Do not overcrowd. Fry in batches.

After about 10 minutes, pull the air fryer basket again and flip the chicken pieces. Cook for another 5-7 minutes.

Serve hot with Mint chutney, lemon wedges, and onion rings.

The cooking time may vary based on the air fryer brand that you use and the size of the chicken drumsticks.

FAQs:

Regular red chili powder can be used. But it will be spicier than Kashmiri red chili powder. So adjust the amount of red chili powder added accordingly. You may use only half a tablespoon of it. Kashmiri red chili powder also makes the kebab redder in appearance.

Substitute for hung curd: You may use Greek Yogurt instead of hung curd for this recipe.

How to make hung curd at home

To easily make hung curd at home, strain about 1.5 to 2 cups of regular curd for an hour in a strainer or tied in a muslin cloth. You will get one cup of thick hung curd.

Substitute for Aamchur or Dry Mango Powder: If you do not have Aamchur powder at home, use Chaat masala.

Without Oil: You may choose to skip adding any oil to the recipe while preparing in an air fryer. The drumsticks will still be soft and juicy. I added a tablespoon of mustard oil for its pungent flavor and for a glossy texture on the drumsticks. You may also use any vegetable oil of your choice if you choose to.
