Veg Pulao is an easy-to-make delicious Indian rice where fragrant basmati rice is cooked with vegetables and spices. Also known as Vegetable Pulao, Pulav, or Indian Pulao, this dish is loved by children and adults alike and can be made with everyday Indian pantry ingredients.
The very first recipe that I posted on this blog was a version of Indian Rice Pilaf where aromatic basmati rice was topped with nuts and raisins, unlike vegetables in this recipe.
What is Pulao
Pulao is a one-pot rice dish where basmati rice is cooked with spices and/or vegetables and meat. There are many ways to preparing Pulao like Chicken Pulao, Indian Rice Pilaf, Carrot and Pea Pilaf, Zarda Pulao etc.
Pulao is different from Biriyani, don't get them mixed up.

And this recipe calls for adding simple, everyday vegetables making it a Vegetable Pulao.
Veg Pulao is a regular in my home. I believe, it is the same with many Indian households. But why this recipe is special to me is because I have fond memories attached to it.
As a child, I was a fuzzy eater. And the only way my mom could make me eat vegetables was by preparing different varieties of pulao and fried rice. I was a happy kiddo whenever I found this veg pulao in my lunch box.
That's exactly why I would urge every parent with a toddler to try and make this recipe at home. You'll be pleased to find your child gobble the dish without any complaints.
Not only is this dish kid-friendly, but you can also pack it for your lunch at work. While pulao is best served with raita and pickle, you can always serve a side of your favorite curry or omit any sides entirely.

How to Make Restaurant Style Vegetable Pulao
1.To make this vegetable pulao, heat a deep utensil. and add ghee/oil/butter. Add finely chopped garlic, bay leaf, cloves, cinnamon, and cardamom.
2. To this add finely sliced onion and saute.
3. Once the onion is slightly browned, add chopped green beans. Saute for a couple of minutes.
4. To this, add finely chopped carrot and saute.
5. It is now time to add the sweet corn. You may omit to add corn and choose to include green peas. Mix well.
6. Add washed basmati/long grain rice to it and mix.
7. Season it with some salt. You may also add a dash of garam masala powder. This is completely optional.
8. Add water and cover and cook until the rice is done.
Serve hot with a side of your choice.
Alternate Ways to Cook Rice for Veg Pulao
Electric Rice Cooker Method:
If you aren't comfortable with cooking rice in this way, on a stovetop, you may try the electric rice cooker method. Transfer the entire mixture to the electric rice cooker and switch on the 'cooking mode', just like how you prepare your regular rice. You needn't add any additional water. In fact, this is my preferred method.
Pressure Cooker Method:
Another way is the pressure cooker method. Here, you can follow the same steps, but instead of a deep utensil, use a pressure cooker to cook the vegetables. Pressure cook in medium to high heat for a whistle. Immediately release the pressure and fluff the rice using a fork.

Ingredients
- 1.5 cups Basmati Rice, washed
- 2 and a quarter cup Water
- 3 tbsp Ghee (or Oil/Butter)
- 1 tbsp Garlic, finely chopped
- 1 Bay leaf
- 2-3 Cloves
- 1" Cinnamon
- 2 Cardamom
- 1 cup Onion, finely sliced
- ¼ cup Green beans, chopped (or diagonally cut)
- ⅛ cup Carrot, finely chopped
- ⅛ cup Sweet Corn
- Salt, to taste
- ½ tsp Garam Masala Powder (optional)

Veg pulao is one of the best ways to slide veggies that are often not easily eaten at home. I follow the same method as you since the rice grains are properly separated and flavoured this way.
