Dig into this easy, cheesy Spinach Quesadillas inspired by the Mexican cuisine!

These spinach quesadillas are gooey, cheesy, delicious and incredibly easy to prepare. I always thought quesadillas are pretty darn difficult to make. But then came this recipe which I could whip up in a matter of minutes. I have used flour tortillas here, made from scratch. You can also use store bought ones. Cheese, tortilla, and spinach – all combined and melted together. It doesn’t get easier than this.

Today was one of those days where I was sulking for no reason. Does this happen to you? This is the second time that I almost gave up during this A to Z Challenge. I had already prepared this dish, had clicked the photographs but I just didn’t want to post or write or do anything. Anyway, at this eleventh hour, I have decided to get on with it. Thanks to the article on the A to Z Challenge official page – Don’t Quit.

That said, here’s the recipe for this easy peasy Spinach and Cheese Quesadillas.

Ingredients

  • 2 large tortillas
  • a handful of baby spinach
  • 2 tbsp tomato
  • 2 tbsp frozen corn kernels
  • Salt, to taste
  • 2 tbsp oil
  • 3 tbsp mozzarella cheese
  • 1 tbsp feta cheese (optional)
  • 1/4 tsp oregano
  • 1/4 tsp red chilli flakes
  • 1/4 tsp cumin, ground
Print this recipe

Instructions

  1. Heat oil in a pan and add spinach, tomato and corn kernels. Add a pinch of salt and cover and cook until the spinach leaves wilt. This will take a couple of minutes. Remove from heat.
  2. Heat a pan and brush some oil. Place a tortilla and sprinkle the mozzarella cheese and feta cheese, dried oregano, red chilli flakes and spinach mixture.
  3. Place and press down the second tortilla over this.
  4. Turn the quesadilla over and cook the other side.
  5. Serve on a plate and cut into four or eight wedges. Serve hot with a salsa.
