Chicken Fried Rice is one of the well-loved recipes in our home and the homemade version is even better than takeout. Once you try this, I'm sure you are never going to opt for takeout from a restaurant again.

What is Fried Rice?
Fried Rice is a Chinese stir fry made with rice. It is a staple in most Asian restaurants. A protein of your choice is added to it. Optional ingredients include scrambled eggs and vegetables. The protein, vegetables, and rice are then stir-fried in delicious soy sauce.
What Protein Can I Use for Fried Rice?
You can use almost any protein of your choice. But the popular and favorite ones include chicken, shrimp, beef and pork. I've used chicken here (obviously!) and you may use chicken breasts or chicken thighs though the latter is more flavorful.
How to Cook Rice for Fried Rice
Fried Rice is an easy way to use leftover rice. In fact, I believe using leftover rice is the secret to making a bowl of great fried rice. A freshly cooked warm rice results in gooey and mushy rice, especially when mixed with the different sauces.
Any long grain rice is great to make fried rice. The Indian Basmati rice or Jasmine rice will make do. These make the dish more relishing for Basmati rice is flavorful and has a distinct aroma.
If you do not have leftover rice, follow this method for cooking rice for fried rice.
One cup of raw Basmati rice will make about 3 cups of cooked rice. I cook rice in a rice cooker. So, I add one cup of Basmati rice, 2 cups of water, salt, a tablespoon of butter, a bay leaf and a few cloves for added flavor.
Once cooked, it is transferred to an open casserole dish and spread to cool. The cooled rice is then refrigerated for an hour or so before using it to prepare the fried rice.

Ingredients:
- Leftover Rice
- Chicken
- Onion
- Cabbage
- Bell peppers
- Garlic
- Soy Sauce
- Oil
- Salt and Pepper

- Prep the vegetables and cook chicken pieces in boiling water.
- Heat oil in a pan and stir-fry the vegetables.
- Add shredded cooked chicken and season with salt and pepper.
- Soy sauce (and vinegar) comes next.
- Add leftover rice and mix thoroughly. Dinner is ready! Serve hot with a Chinese side of your choice.

Here's a quick way to use that leftover rice! Prepare this delicious chicken fried rice which comes together in under 30 minutes.
Ingredients
- 3 cups of Leftover rice
- 200 gms Chicken
- 2-3 Garlic pods, crushed
- 2 tbsp Oil
- 2 tbsp Garlic, finely chopped
- 1 medium Onion, finely sliced
- 3-4 Green chilies, finely chopped
- 1 green Bell pepper, finely sliced
- 1 red Bell pepper, finely sliced
- ½ cup Cabbage, finely sliced
- Salt, to taste
- 2 tsp Pepper
- 1.5 tbsp Soy Sauce
- Spring Onion Greens, bais-cut, for garnish
Instructions
- Cook chicken in 2 cups of water. Season and add crushed garlic pods.
- In a deep wok, add oil. When the oil is hot, add garlic.
- Add green chilies and onion. Saute till the onions are slightly cooked.
- Add bell peppers and cabbage and saute in high heat for a couple of minutes.
- Season with salt and pepper.
- Add soy sauce and mix well.
- Add leftover rice and combine everything well.
- Garnish with spring onion greens and serve hot.
Notes
Add sesame oil instead of regular vegetable oil to enhance the flavour.
You may add scrambled eggs, mushrooms, green beans, sweet corn and peas as well.
