Jerk Chicken #AtoZChallenge

Jerk Chicken is a dish from Jamaica, incorporating the Caribbean flavours which is neither too spicy nor exotic. The taste comes from the blend of garlic, onion, thyme, all spice and nutmeg. The marinade can burn easily and hence the chicken should be slow cooked on the grill.

The spice blend can also be used on pork, seafood or aubergine to get the smoky Caribbean flavor. This can be served with rice or even used for making a sandwich. You can also, saute some juvenile carrots, onion and beans.

Ingredients
  • 3 scallions chopped
  • 1 Onion chopped
  • 3 chillies chopped
  • 4 Garlic cloves chopped
  • 1/2 lime juice
  • 1 tbsp thyme leaves
  • 1/2 tbsp brown sugar
  • 1 tbsp all spice
  • 1 tbsp black pepper crushed
  • 1 tsp nutmeg powder
  • 1/4 tsp cinnamon
  • 300 gms Chicken drumsticks and breasts
Servings:
Instructions
  1. Blend all the ingredients together, except chicken.
  2. Marinate the chicken pieces for about 45 mins. You can keep it longer in refrigerator, up to a day.
  3. Grill the chicken pieces, in a grill pan/oven. Cook in low heat as the marinade tend to burn easily.

I have a confession to make. And a good one at that. I loooove Indian Curries. Add coconut milk to it, that becomes undoubtedly my favorite. Blame it on my South-Indian genes, but that’s my one true love.

I called up Mom a couple of days back to ask what I should be cooking for the letter I. I honestly didn’t expect that she would come up with this recipe. All she said was to give it a shot.

It is quite similar to the Kerala Chicken Stew. The fried shallots, along with a tinge of spices and coconut milk brings out the delicious flavour of the dish.

The aroma fills the kitchen and boy oh boy, you are surely in for a treat. And the beautiful color- that’s from turmeric.

Ingredients
To Grind
  • 1/2 tsp Turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp nutmeg powder
  • 1/4 cup cashew nuts
  • 1/2 cup shallot
  • 1 1/2 tbsp Ginger Garlic paste
  • 3 cloves
  • 3 Red chillies dried
  • 2 green chilies slit
Others
  • 3 tbsp oil
  • 3 lime leaves
  • 2 lil' lemon grass
  • 2 1 inch cinnamon sticks
  • 200 gms Chicken Breasts cut into cubes
  • 1/4 cup thick coconut milk
  • 1/2 cup thin coconut milk
  • 1 cup water/chick stock
Servings: people
Instructions
  1. Grind together the ingredients mentioned under the category - To Grind.
  2. In a non-stick skillet or iron pan, add oil. Once hot, add cinnamon sticks, lemongrass stalks, and lime leaves. Saute for about a minute.
  3. Add the ground paste and saute for a couple of minutes.
  4. Add chicken pieces and cook for a couple of minutes per side, until browned.
  5. Add the thick coconut milk and water/stock. Mix well. Cover and cook in low heat for about 10-15 mins or until chicken is cooked through.
  6. Add the thin coconut milk and cook for a few more minutes.
  7. Serve hot with rice.

How to make honey sesame chicken with a sticky sauce

Honey Sesame Chicken – Easy Asian Sticky Chicken where batter-fried chicken pieces are tossed in a sweet and savory sauce. 100% better than takeout.

Honey Sesame Chicken is one of the easiest recipes you can try at home. Made with everyday ingredients in your pantry, this is one of those go-to dishes I make whenever husband and I crave for Chinese food.

The first time I cooked this recipe was on a lazy Sunday afternoon a few years ago. The husband had gone all gaga over it and couldn’t stop licking his fingers, I distinctly remember.

Of course, the sticky sauce is a big reason enough. However, it is an enjoyable dish to prepare and eat, to say the least.

Honey Sesame Chicken is one of the most popular and sort after dishes in Asian cuisine. There are many versions of it in your Panda Express or P.F. Changs and yes, I confess, we simply cannot get enough of it.

That said, with bare minimum ingredients you can whip up this dish at home and you are never going to opt for that naughty takeaways anymore.

Honey sesame chicken with rice and asian noodles

This dish has to be served hot with steamed rice or noodles. As it cools down, the honey solidifies.

As you can see, I love it with my steamed rice – plain and simple. And the husband prefers his noodles with honey sesame chicken.

How to Make Honey Sesame Chicken at Home

Prepare the Batter: To make Honey Sesame Chicken, we’ll need to batter-fry the chicken pieces first. So, for the batter, mix together the cornflour, egg whiles, salt, and white pepper powder. Substitute white pepper with black pepper powder if you do not have the former. You may also add red chilies or oregano for added flavoring.

Fry: Cube some boneless chicken, dip in the batter and deep fry in hot oil. Remove and keep aside.

Making the Sauce: To make the sauce, heat oil in a wok, and add dry chilies and spring onion whites. Once the onions are slightly cooked, add tomato ketchup, chili oil or chili sauce. Mix well and season with some salt. Add cornflour slurry, mix well and bring it to a boil.

Toss: Add chicken and honey and combine well.

Serve: Garnish with spring onion green and white sesame seeds. Serve warm with steamed rice or noodles.

  • oil for deep fry
For Batter
  • 2 egg whites
  • 2 tbsp Corn flour
  • Salt to taste
  • 1/2 tsp white pepper powder
For Sauce
  • 2 tbsp oil
  • 2 dry red chilies
  • 2 spring onions white and greens chopped seperately
  • 3 tbsp Tomato ketchup
  • 2 tbsp honey
  • 1 tbsp chilli oil if not chilli sauce
  • Salt to taste
  • 1/2 tsp white pepper powder
  • 1 tsp Corn flour dissolved in 1/8 cup of water

Instructions
  1. First, let's prepare the batter. For this, add egg whites, cornflour, salt, and white pepper powder in a bowl. Mix well to form a lump-free batter.
  2. Dip the chicken cubes in it and deep fry in hot oil until golden brown. Remove and keep aside.
  3. Heat oil in a wok. Add dry red chilies and whites of spring onions. Saute.
  4. Add the tomato ketchup, chili oil/chili sauce, and salt. Mix well.
  5. Add cornflour mixed in water and bring to a boil.
  6. Add the chicken and honey. Mix well.
  7. Sprinkle a tsp of white sesame seeds. Combine.
  8. Garnish with spring onion greens.

Search the internet and you see so many different varieties of Ginger Garlic Chicken. This one is my favorite and it goes well with noodles and steamed rice.

I love ginger and garlic and the aroma that fills the kitchen when it is saute in oil is one thing which I love about Asian cooking.

The dish is mildly spicy and the slightly tangy taste comes from the tomato sauce added to it.

Ingredients

  • 500 gms


    Boneless Chicken cut into strips

  • 1/2 cup


    Onion finely chopped

  • 1 big piece


    ginger finely chopped

  • 10 cloves


    garlic finely chopped

  • 1 tbsp


    Ginger Garlic paste

  • 1/2 cup


    Spring onion finely chopped

  • 1 tsp


    soy saucce

  • 11 tsp


    tomato sauce

  • 1 tsp


    Chilli sauce

  • 1 tbsp


    oil

  • 1 tsp


    Corn flour

  • 1/2 cup


    chicken stock/water



  • Salt to taste

  • 1/2 cup


    oil for deep fry

For marinade

  • 1


    egg beaten

  • 3 tsp


    Corn flour

  • 1/2 tsp


    Ginger Garlic paste

  • 1/2 tsp


    soy sauce



  • Salt to taste


Servings: servings

Instructions
  1. Marinate the chicken strips with the ingredients mentioned for marinade, for 30 mins.

  2. Deep fry the chicken strips and remove.

  3. In a pan, add a tbsp on oil and ginger, garlic, onion, spring onion whites and half of the spring onion greens. Saute.

  4. Add sauces and saute in high flame for a minute.

  5. Add the fried chicken pieces, salt and mix well.

  6. Mix cornflour in chicken stock and add to the pan.

  7. When it thickens, remove from fire.

  8. Serve hot garnished with spring onion greens

Talk about Mexican food and the first thing that would pop in your head would be Fajitas. Traditionally made with beef steak, these days, it is also prepared with marinated chicken strips.

I took this recipe to cook just because I love bell peppers. You wouldn’t be surprised if you find me admiring the colorful bell peppers stacked neatly in a super-market.

Ingredients
  • 4 tbsp oil
  • 2 tbsp lime juice
  • Salt to taste
  • 1 1/2 tsp cumin powder
  • 1 tsp garlic paste/powder
  • 1/2 tsp chili powder
  • 1/2 tsp red chili flakes
  • 200 gms Boneless Chicken cut into strips
  • 1/2 medium red bell pepper julienned
  • 1/2 medium yellow bell pepper julienned
  • 1/2 medium green bell pepper julienned
  • 1/4 cup green onion thinly sliced
  • 1/4 cup Onion thinly sliced
Servings:
Instructions
  1. Marinate the chicken strips with 2 tablespoons oil, lemon juice and seasonings for a minimum of two hours.
  2. In a non-stick pan, saute peppers and onions in remaining oil for a couple of minutes. Do not cook until too soft. Retain the crispiness of the veggies. Remove.
  3. Cook the chicken strips over medium-high heat for about 5 minutes, until no longer pink. Add the cooked vegetables to the pan and saute for another couple of mins.
  4. Done! Spoon the filling onto the tortillas.

Easter had just gone by and how I wish I had posted this recipe on time. Nevertheless, here it is. A quick, hassle-free recipe. Not sure why it is called an ‘Easter’ Chicken Pepper Roast. However, this is one of my signature dishes. I have cooked this countless times and it has never failed me. And oh yeah, it is P’s favorite too. He gets cutely possessive when I cook this for my friends at work! 😛

This Pepper Chicken Roast comes straight from the heart of Kerala- the southern most state of India. The flavor of crushed peppercorns simply makes you go yum!

  • 200 gms Boneless Chicken cut into bite-sized chinks
  • 3 tbsp oil preferably, coconut oil
  • 2 Red chillies slit
  • 1 cup Onion sliced
  • 6 Garlic cloves chopped or mashed
  • 2 tbsp Peppercorns crushed
  • 1 inch Cinnamon stick
  • Salt to taste

Instructions
  1. Heat oil in a non-stick pan and sauté onion until golden brown.
  2. Add crushed garlic and sauté for a couple of minutes.
  3. Add the red chilies, chicken, salt, pepper and cinnamon sticks and mix well.
  4. Cook covered over low heat for 20mins while stirring every 5mins.
  5. The chicken would be coated with pepper and onion and would be tender.
  6. Server hot!!
Recipe Notes

Trust me when I say, do not add water. Cook covered in low heat so that the chicken gets cooked in its water content.
