Dragon Chicken #AtoZChallenge

My first time cooking this recipe was when I was engaged to P. I was living as a Paying Guest and had asked my roomies and house owners to have a taste of this dish. They let out a sigh, “He is one lucky man!!”. 🙂

Time flew, I got married and it’s been three years. Whoa! When my younger sister visitied us for the first time after my wedding, she demanded that I make this dish. She was floored by my Kohl Eyed Me blogwhere I posted few recipes long before. (Now, I’ve started this separate space).

And boy! She loved it! I know you would too. <3

Dragon Chicken - Recipe - Chinese

 

Dragon Chicken is an Indo-Chinese dish served as a side dish to fried rice. It can also be served as a starter. This dish is slightly sweet and tangy but you can adjust the spice level to suit your taste.

Topped with fried cashews and the tangy taste from the ketchup is sure to make your stomach twirl.

Ingredients
  • 200 gms Boneless Chicken cut into bite-sized chunks
Marinade/Batter
  • 3 tbsp Corn flour
  • 1 egg white
  • 1/2 tsp pepper powder
  • 1/4 tsp Soya sauce
  • Salt to taste
Cooking
  • oil for deep frying
  • 2 tbsp oil
  • 2 tbsp Cashews
  • 1 tbsp Ginger Garlic paste
  • 2 Red chillies slit
  • 1/2 cup Spring onion white
  • 1/2 cup Spring onion greens
  • 1/4 cup Capsicum cut into strips
  • 1/4 cup Carrot cut into strips
  • 1/2 tsp Chilli sauce
  • 2 tbsp Tomato ketchup
  • 1/2 tbsp Soya sauce
  • Salt to taste
  • 1/2 tsp Sugar
Servings: people
Instructions
  1. Dip the chicken chunks in batter and let it marinate for 10-15mins. Deep fry till golden brown. Remove the chicken strips and excess oil. P.S: Yes, you will be tempted to have the chicken now itself!! Who is stopping you!! You can (just like I did!! ) But, yes the end result is always the best! So, hold on…
  2. To the pan, add the chopped cashews and fry till brown.
  3. Add red chillies, ginger-garlic paste and spring onion whites. Saute.
  4. Add chopped capsicum and carrots. Saute in high flame. This will retain the crispiness of the vegetables.
  5. Add red chilly paste, soy sauce, tomato ketchup, salt, sugar and mix well.
  6. Cook for a couple of mins till sauce thickens. Add fried chicken and toss well in the sauce.
  7. Garnish with spring onion greens.
  8. Serve hot

A Cutlet or Croquette is a popular snack made from grounded meat or vegetables. Chicken Cutlets are my favorite. We have a famous food chain in Kerala known as the “Indian Coffee House”. Again, popular for its Ghee Roast, Kerala Poratta and Chicken Curry, we also get yummy Chicken Cutlets there. My fond memories go back to those days when we visited these restaurants on our way to Dad’s home. Haa! South Indian Filter Coffee and hot Chicken Cutlets! You simply go Yummmm….

Ingredients
  • 200 gms Boneless Chicken minced
  • 1/4 cup Onion finely chopped
  • 1/2 tsp Ginger Garlic paste
  • 2 Green chillies finely chopped
  • 1 Potato boiled and mashed
  • 1 tsp pepper powder
  • 1 tsp Garam Masala
  • 1/2 cup breadcrumbs
  • 1 egg white beaten
  • 1 sprig curry leaves finely chopped
  • oil for deep frying
  • Salt to taste
Servings: cutlets
Instructions
  1. Cook the minced chicken in 1 tsp oil. Remove to cool.
  2. In a pan, add 2 tsp of oil and add onion. Saute till soft. Add green chillies, ginger-garlic paste and curry leaves. Saute again.
  3. Add the cooked chicken and mix. Add pepper powder. garam masala powder, salt. Mix and cook for a couple of minutes. Remove to cool.
  4. Add mashed potato and mix well. Make desired shapes from the mixture- heart, balls or circles for example.
  5. Dip each in beaten egg whites, then coat with breadcrumbs (unfortunatley I didn't have them and coated with powdered corn flakes), and deep fry in oil.
  6. Serve with tomato ketchup and chopped onion.

Butter Chicken #AtoZChallenge

Visit India and you are bound to have this mildly spiced curry called Butter Chicken or Murgh Makhani. It is undoubtedly one of the most popular Indian dishes across the world too.

The flavor comes from the use of spices and the rich and creamy tomato sauce.

I have seen different variants to the dish. Some where the creamy sauce is cooked with tandoori chicken(i.e the chicken is grilled/cooked before adding to the tomato sauce) and some, where boneless chicken is added to the sauce and cooked along with it. But, I took Chef Sanjeev Kapoor’s never-failing recipe! And I’m glad with the result.

Ingredients
  • 300 gm Boneless Chicken
  • 1 tbsp Lemon juice
  • 1 tsp Kashmiri Red Chilli Powder
  • 2 tbsp butter
  • Salt to taste
For Marination
  • 1/2 cup Yogurt
  • 2 tsp Ginger Garlic paste
  • 1/2 tsp Kashmiri Red Chilli Powder
  • 1/2 tsp Garama Masala Powder
  • 1 tsp oil any
  • Salt to taste
For Gravy
  • 2 tbsp butter
  • 2 pieces Clove
  • 2 pieces Green Cardamon
  • 1 inch piece Cinnamon stick
  • 2 Peppercorns
  • 1 tbsp Ginger Garlic paste
  • 1/2 cup Pureed Tomato
  • 1/2 cup water room temperature
  • 1/2 tsp red chilli powder
  • 1/2 tsp Sugar you can omit if you do not like the gravy too sweet
  • 1/2 tsp Kastoori Methi or Dried Fenugreek Leaves
  • 1/2 cup Fresh Cream
Servings: peopl
Instructions
Let's Marinate the Chicken first
  1. Cut the boneless chicken into bite-sized pieces. For the first marinade, apply lemon juice and salt on them. Refrigerate for about 30 mins.
  2. For the second marinade, apply a mixture of yogurt, ginger-garlic paste, red chilli powder, garam masala powder, little more salt and oil. Refrigerate for 2 hours.
Tandoor/Grill the Chicken
  1. You can grill them in an oven on skewers or on a grill pan, till almost done.
For the Gravy
  1. Heat butter in a pan, add cardamon, cloves, peppercorns and cinnamon. Once it splutters, add ginger-garlic paste and saute for a couple of mins.
  2. Add tomato puree, red chilli powder, salt and half cup of water. Cook for a couple of mins, till it comes to a boil.
  3. Simmer and allow the mixture to reduce. Another ten mins will suffice. Add sugar(if using) and kastoori methi. Mix well.
  4. Add the tandoor pieces (you can also shred them before adding, if you do not like chunks). Mix again.
  5. Add fresh cream. Mix again and remove from heat immediately.
  6. Garnish with a spoonful of fresh cream and serve hot with Indian Flatbread or Rice.
Recipe Notes

To puree the tomato, take about 5-6 medium tomatoes and boil and cook in water. Peel off and once cooled, blend them in a mixer to get the puree.

You can directly blend raw tomatoes, but will have to cook the puree for some more time though.

Ha! Who doesn’t like those juicy succulent Chicken Kebabs? Excellent as starters especially when you have guests at home. Or why not surprise your loved one? P would love to gorge on this at any time of the day.

Afghani Chicken Kebabs is a delightful dish coming straight from the Mughal era. The chicken thighs are cut into bite sized chunks and are marinated with yogurt, lemon juice and spices.

The yogurt and spice marinade is left on the chicken for a good two hours or even over night and acts as a brilliant tenderizer. And it is this mix which is the secret to the savory kebabs.

Ingredients
  • 200 gms Chicken Breasts
  • 2 tbsp Ginger Garlic paste
  • 1 tbsp Gram Flour/Corn Flour
  • 1/2 cup thick Yogurt
  • 1 tsp Lemon juice
  • 1 tsp Garam Masala powder
  • 1 tsp Kasturi Methi also called dried fenugreek leaves
  • 1 tbsp oil
  • 1 tsp red chilli powder
  • a pinch Turmeric powder
  • Salt to taste
Servings:
Instructions
  1. Cut chicken breasts into cubes.
  2. In a bowl, whisk together yogurt, ginger garlic paste, lemon juice and oil. Add other ingredients as well and mix well.
  3. Marinate the chicken pieces with this mixture and refrigerate for a couple of hours. You can also keep it overnight.
  4. Skew the marinated chicken pieces and grill them in an oven/grill pan/barbeque
  5. Serve hot with Mint Dip/Chutney.

Yet another comfort food coming your way. I am all up for trying out new recipes in the kitchen- however complicated that might be. But I should agree that there are days when all I wish for is to have white rice, curd, potato fry, scrambled eggs and a pickle. Weird combo? But that’s my ultimate comfort food! In fact, Mamma always said that I was fuss-free as a kid. It was easy for her to prepare my lunch box as the menu remained exactly the same every single day.

This version of the Potato fry is the simplest of them all. It’s Mamma’s one of the easy-peasy recipes. It is P’s favorite too!

Ingredients
  • 2 medium potatoes cubed
  • 1/2 tsp Cumin seeds
  • a pinch Turmeric powder
  • 2 tbsp oil
  • Salt

Instructions
  1. Heat oil in a pan and crack cumin seeds.
  2. Add cubed potatoes, turmeric powder and salt.
  3. Cover and cook for a couple of minutes in medium heat.
  4. In case the potatoes are getting burnt, splash a handful of water and cook covered for another couple of minutes.
  5. Oh yeah, done!

Our comfort food! Be it for breakfast or a side dish for lunch or dinner, scrambled eggs tops our list of quick and easy to make recipes. Ask my husband! This is one which he had mastered from day one. It is an inevitable part of our ‘breakfast in bed’ Sunday. Well, he cooks and I eat!

Ingredients
  • 4 eggs
  • 1/4 cup milk
  • 2 tsp butter
  • salt and pepper to taste

Instructions
  1. Beat all the ingredients except butter in a bowl.
  2. In a large nonstick skillet, add butter. Before it turns brown, pour the beaten mixture. Cook in low heat till egg begins to settle.
  3. Gently pull the eggs across the pan. Do not stir/scramble. This will help in forming soft curls.
  4. Continue till no visible liquid egg remains. Remove from heat. Do not overcook. Eggs tend to cook by themselves even after transferring to the plate.
Recipe Notes

You can also add chopped spring onions, chili flakes, onions etc. Be careful of the cooking time though.
